The perfect meal for those adventerous types looking for something different for their next party or gathering. I source a  locally raised whole pig and roast it on a specially made, Cuban style, open air pit.  I prepare the pig for 24hours before the cooking begins.  I'll come to your house, set up the pit and roast the pig all day on site.  It's a great way to "assault the senses" and really get your guests' mouths watering prior to the feast!
